Healthy Christmas Candy Cane Lollies (Gummies)

Gut healing, Gluten-Free, Dairy-Free, Refined Sugar-Free, Healthy Christmas

Red Gummie Layer Ingredients:

  • 1 Tablespoon Gelatin
  • 2 Tablespoon water
  • 100g organic frozen raspberries, thawed and pureed 

Red Gummie Layer Method: 

Step 1:  Mix gelatin with water in small bowl and let the gelatin 'bloom' for 5 minutes
Step 2:  In a small saucepan add the 'bloomed' gelatin and raspberries. Turn heat on low and stir constantly until gelatin has fully dissolve. (Thermomix method: 50 degrees, speed 2, 3 minutes)
Step 3:  Pour mixture into a glass dish and put into fridge while you prepare the white layer.

White Gummie Layer Ingredients:

  • 3 Tablespoon Gelatin
  • 3 Tablespoon water
  • 1 cup coconut cream (270ml tin)
  • 2 Tablespoon maple syrup or honey
  • 3 Drops of pure Peppermint essential oil

White Gummie Layer Method: 

Step 1:  Mix gelatin with water in small bowl and let 'bloom' for 5 minutes
Step 2:  In the same saucepan as before (no need to clean in between) add all the white layer ingredients. Turn heat on low and stir constantly until gelatin has fully dissolve. (Thermomix method: 50 degrees, speed 2, 3 minutes)
Step 3:  Pour mixture gentle on top of the red layer and use a skewer to create a marble effect.
Step 4:  Set in fridge for 2 hours then, slice into squares.  Store in airtight container in the fridge. 

Note: Since there are no preservatives or artificial colours the red colour will fade so best enjoyed within 2 days.  It makes quite a lot, so consider making half a batch.
