Coconut Mango Splice Gummies
Gut healing, Gluten-Free, Dairy-Free, Refined Sugar-Free
Mango Layer Ingredients:
- 1 Tablespoon Gelatin (We use this organic one)
- 2 Tablespoon water
- 100g mango, pureed
Mango Layer Method:
Step 1: Mix gelatin with water in small bowl and let the gelatin 'bloom' for 5 minutes
Step 2: In a small saucepan add the 'bloomed' gelatin and mango. Turn heat on low and stir constantly until gelatin has fully dissolve. (Thermomix method: 50 degrees, speed 2, 3 minutes)
Step 3: Pour mixture into a glass dish and put into freezer while you prepare the coconut layer.
Coconut Layer Ingredients:
- 3 Tablespoon Gelatin
- 3 Tablespoon water
- 1 cup coconut cream (270ml tin)
- 1/4 teaspoon vanilla powder (or 1 teaspoon vanilla essence)
- 2 Tablespoon maple syrup or honey (optional)
Coconut Layer Method:
Step 1: Mix gelatin with water in small bowl and let 'bloom' for 5 minutes
Step 2: In the same saucepan as before (no need to clean in between) add all the coconut layer ingredients. Turn heat on low and stir constantly until gelatin has fully dissolve. (Thermomix method: 50 degrees, speed 2, 3 minutes)
Step 3: Pour mixture gentle on top of the mango layer.
Step 4: Set in fridge for 2 hours then, slice into squares. Store in airtight container in the fridge.
