Chicken Karahi Recipe

Recipe contribution by guest blogger Karlie Eat to Live. It's easy to prepare and beautifully warming on a cold winter's night.

Chicken Karahi, also know as Gosht Karahi (when prepared with goat or lamb meat instead of chicken) is a popular Pakistani and North Indian dish noted for its spicy taste.

Chicken Karahi is typically served with hot chapati or naan bread, but it's also great on its own, with smashed avocado, atop mashed sweet potato, riced cauliflower or with baked potatoes.

Chicken Karahi Ingredients:

  • 2 whole organic chickens chopped into small pieces, bones left in
  • 3 onions, diced
  • 7 roma tomatoes, sliced julienne
  • 3 Tablespoons pure tomato paste
  • Knob of fresh ginger, grated or finely sliced
  • 5 garlic cloves, finely chopped
  • 1-4 long green chillies (depending on taste), chopped
  • 1 teaspoon turmeric powder
  • 1/2 Tablespoon curry powder, e.g. garam masala
  • Salt to taste (we like using this seaweed salt for added natural iodine)
  • Ghee or coconut oil for cooking
  • Bunch of fresh coriander to serve

Chicken Karahi Method:

Step 1: Heat your cooking fat in a wok/pan and add onion, garlic, ginger and chills, stir fry for a few seconds.

Step 2: Add Roma tomatoes and spices, stir well.

Step 3: Add Chicken and tomato paste, cook for 1-2 minutes.

Step 4: Cook covered with lid until the chicken is cooked through and the tomato skins end up in little "twists". Stir. Take lid off until the naturally occurring chicken/tomato stock reduces to a lovely saucy consistency via evaporation.

Step 5: Garnish with fresh coriander.
