No-wheat Pumpkin Spice Loaf

Pumpkin loaf gluten-free

Gluten-free, Dairy-free, refined sugar-free

This pumpkin spice loaf is so delicious and easy to make, nourishing and easier to digest for those with sensitivity to grains. Macadamia oil is great for omega 3's and overall a good fat to include in your daily intake.

Ingredients

  • 2 cups of grated raw pumpkin / 250 grams
  • 2 free range eggs
  • 1 teaspoon vanilla extract
  • ¼ cup of macadamia oil (or olive oil)
  • ¼ cup of maple syrup (or honey)
  • ¾ teaspoon of bicarbonate soda
  • 1 ½ teaspoon of sweet spice mix (or just cinnamon power)
  • 1 cup of arrowroot flour (or can use almond meal or a mixture of both)
  • 1 cup of preservative free sultanas
  • ¼ cup of flaked almonds or sunflower seeds (or other favourite seed or nuts).

Conventional Method

  1. Line a 25cm x 15cm loaf tin with baking paper and preheat oven to 150 degrees fan forced (or 170 degrees no fan)
  2. Mix all ingredients together well in a large bowl and pour mixture into the tin.
  3. Sprinkle the top with flaked almonds or your favourite seed mix.
  4. Bake for 60-75minutes until golden with colour and an inserted skewer comes out clean.
  5. Cool for 30 minutes before removing from the loaf tin.
  6. Slice and enjoy with a little honey and coconut cream.

Thermomix Method

  1. Chop pumpkin into chunks and blitz for 5 seconds, speed 6
  2. Add eggs, vanilla, oil, maple syrup, bicarb, spices. 20 seconds, speed 4.
  3. Add in flour and sultanas. Reverse setting, 20 seconds, speed 4. Check flour is mixed through and if not scrape down bowl with spatula and mix again reverse, 10 seconds, speed 4.
  4. Pour mixture into lined loaf tin and sprinkle with flaked almonds or your favourite seed mix.
  5. Bake for 60-75 minutes until golden with colour and an inserted skewer comes out clean.
  6. Cool for 30 minutes before removing from the loaf tin.
  7. Slice and enjoy with a little honey and coconut cream.
